Easy, Healthy High-Fiber Muffins (That Kids Actually Eat)

This recipe is all about easy. And yes, it cheats a little.
We recently had to increase my daughter’s fiber intake, and I was looking for something she would actually grab, eat willingly, and even consider a treat. Life is busy, and while a fully from-scratch muffin would be ideal, this is my realistic shortcut for delicious, guilt-free muffins every single time.
For me, this means one less packaged bar in the pantry and a quick breakfast or snack I feel genuinely good about.
The Cheat (And Why It Works)
I start with a high-fiber bran muffin mix. The bran muffin mix by Quaker is easy to find for us and does the trick perfectly, but any high-fiber bran mix works here.
From there, we load it up with whole-food ingredients that boost fiber, natural sweetness, and moisture.

Ingredients
1 box high-fiber bran muffin mix
2 eggs
2 cups unsweetened applesauce (used instead of water)
3–4 very ripe bananas, mashed
½ cup finely chopped dates
¼ cup shredded coconut
2 teaspoons cinnamon
Optional:
½ cup white chocolate chips or semi-sweet chocolate chips
Even better: a bar of white baking chocolate, roughly chopped
Instructions
Preheat your oven to 400°F.
Line a muffin tin with paper liners (highly recommended for these moist muffins).
Add the entire muffin mix to your stand mixer or a large bowl.
Add eggs, applesauce, mashed bananas, and cinnamon.
Mix until just combined.
Fold in dates, shredded coconut, and chocolate if using.
Divide batter evenly into muffin liners.
Bake for 20 minutes, or until the tops are golden
Let muffins rest in the pan for 10 minutes, then transfer to a cooling rack.
